I'm very proud [to be part Italian] ... Although I don't eat a lot of Italian things, because I'm vegan. ... I love animals more than I love most people, not kidding. But I am a firm believer in eating a full plant-based, whole food diet that can expand your life length and make you an all-round happier person. It is tricky dining out, but I just stick to what I know – veggies, fruit and salad – then when I get home I'll have something else.

[On Looking 31 at 41] I still have plenty of vices, but alcohol isn't one of them. It's probably just down to sleep and diet. If you travel long haul a lot or don't sleep much, it's not going to last very long, that's for sure. I'm pretty healthy so I think that helps a lot. I've been that way for a long time - 20 solid years of eating vegetarian/vegan and taking care of myself. That probably helps the preservation process.

Good food and good eating are about risk. Every once in a while an oyster, for instance, will make you sick to your stomach. Does this mean you should stop eating oysters? No way. The more exotic the food, the more adventurous the serious eater, the higher the likelihood of later discomfort. I'm not going to deny myself the pleasures of morcilla sausage, or sashimi, or even ropa vieja at the local Cuban joint just because sometimes I feel bad a few hours after I've eaten them.

The National Enquirer published this thing called the "Chow like Cho Diet," which was this fake diet that I never went on, with all these fake quotes from me, like "When I was a little girl, I was raised on rice and fish. So when I get heavy, I go back to that natural Asian way of eating." That is so Mulan. You can almost hear the mandolin in the background. "When I was a little girl, I grow up on the rice paddy... and although we have no food, I have a tendency to put on weight."

I have a really interesting political point of view, and it's not always something I say too loud at dinner tables here, but you can't go from a $2,000-a-night suite at La Mirage to a penitentiary and really understand it and come out a liberal. You can't. I wouldn't wish that experience on anyone else, but it was very, very, very educational for me and has informed my proclivities and politics ever since.

Cooking professionally is a dominant act, at all times about control. Eating well, on the other hand, is about submission. It's about giving up all vestiges of control, about entrusting
your fate entirely to someone else. It's about turning off the mean, manipulative, calculating, and shrewd person inside you, and slipping heedlessly into a new experience as if it were a
warm bath. It's about shutting down the radar and letting good things happen. Let it happen to you.
